Dubai Cookies Delicious Homemade Recipe

Ingredients (Makes 12-14 cookies)

For the Dough:

  • 1 large egg

  • ¾ cup (170g) unsalted butter, softened

  • ½ cup (100g) granulated sugar

  • 1 tbsp cornstarch

  • 2 ½ cups (315g) all-purpose flour (add gradually as needed)

  • 3 tbsp crushed kataifi (shredded phyllo dough) (optional, for extra crunch)

  • 1 tsp baking powder

For the Filling:

  • ¾ cup (200g) peanut butter or pistachio spread

  • ½ cup (60g) crushed kataifi (or finely chopped nuts for crunch)

  • 3 tbsp tahini

  • ½ cup (100g) chocolate chips

Instructions

1️⃣ Prepare the Filling:

  • In a mixing bowl, combine peanut butter (or pistachio spread), crushed kataifi, tahini, and chocolate chips.

  • Scoop small portions onto a parchment-lined tray using a spoon and freeze for about 20 minutes. This makes it easier to roll into the cookies later.

2️⃣ Make the Cookie Dough:

  • In a large bowl, beat the butter, sugar, and egg until smooth and creamy.

  • Gradually add the flour, cornstarch, baking powder, and crushed kataifi, mixing until a soft dough forms.

3️⃣ Assemble the Cookies:

  • Take a small portion of dough, roll it into a ball, then flatten it slightly.

  • Place a frozen piece of filling in the center, wrap the dough around it, and roll into a smooth ball.

  • Arrange the cookies on a parchment-lined baking sheet and chill them in the fridge for 20 minutes before baking.

4️⃣ Bake:

  • Preheat the oven to 350°F (180°C).

  • Bake the cookies for 15-20 minutes or until they are lightly golden.
