Creamy Mediterranean Potato Salad

A refreshing and flavorful potato salad with a Mediterranean twist! Made with lemon juice, mayonnaise, mustard, and a touch of red pepper, this dish is creamy, tangy, and slightly spicy—perfect as a side dish or a light meal.

🥗 Ingredients:

  • 4 medium potatoes, peeled and diced

  • 2 tbsp olive oil

  • 1/2 tsp salt (or to taste)

  • 1/4 tsp black pepper

  • 1/4 tsp red pepper flakes (adjust to taste)

  • 1 tbsp fresh lemon juice

  • 2 tbsp mayonnaise

  • 1 tbsp Dijon mustard

  • 1/2 cup pickles, finely chopped

  • 1 small onion, thinly sliced (optional)

  • 1/4 cup fresh parsley, chopped (for garnish)

🥣 Instructions:

1️⃣ Boil the Potatoes:

  • Place the diced potatoes in a pot of cold salted water.

  • Bring to a boil and cook for 10-12 minutes or until fork-tender.

  • Drain and let them cool slightly.

2️⃣ Prepare the Dressing:

  • In a bowl, whisk together olive oil, mayonnaise, mustard, lemon juice, salt, black pepper, and red pepper flakes.

3️⃣ Assemble the Salad:

  • In a large mixing bowl, combine the cooled potatoes, pickles, and onion (if using).
