Chocolate Chip Cookies

Toronto's winter wonderland is in full swing today! What better way to embrace the snow than by baking a batch of these irresistible cookies? Trust me, they're the perfect antidote to any winter blues. The aroma of warm cookies filling the air while watching the snowflakes fall outside is pure magic. These cookies are designed to have a slightly flatter, chewier texture with crispy edges, just like the ones in your image. The key is to chill the dough and slightly underbake them.

Ingredients:

  • 1/2 cup (1 stick) unsalted butter, softened but still slightly cool

  • 3/4 cup granulated sugar

  • 3/4 cup packed brown sugar

  • 2 teaspoons vanilla extract

  • 2 large eggs

  • 2 1/4 cups all-purpose flour

  • 1 teaspoon baking soda

  • 1 teaspoon salt

  • 1 1/2 cups semi-sweet chocolate chips

Instructions:

  1. Chill: In a bowl, whisk together the flour, baking soda, and salt. Set aside.

  2. Cream: In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.

  3. Wet Ingredients: Beat in the vanilla extract and then the eggs, one at a time.

  4. Combine: Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.

  5. Chocolate Chips: Stir in the chocolate chips.

6. Chill: Cover the dough and chill in the refrigerator for at least 30 minutes, or up to 24 hours. This is crucial for the chewy texture and prevents spreading.

7. Preheat: Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.  

8. Bake: Drop rounded tablespoons of dough onto the prepared baking sheets, leaving some space between cookies.

9. Bake: Bake for 9-10 minutes, or until the edges are golden brown but the centers still look slightly soft. These cookies will firm up as they cool.

10. Cool: Let cool on the baking sheets for a few minutes before transferring to a wire rack to cool completely.
